Arrosticini lamb kebab for summer time

Dear friends with this delicious recipe I wish you good Ferragosto!

As you know I am in Italy on holiday and this recipes, the arrosticini came from the poor shepherds would bring home leftovers from the sheep of their pastures and make skewers out of small pieces of meat for their dinner. The arrosticini are roasted on the outside barbecue so that the fat melts to give a unique flavor to the meat as well as a tender and succulent texture. I like to season them with big salt and pepper while cooking. I assure you that they are the end of the world!

Ingredients:
400gr of lamb meat
30 wood skewers
extra virgin olive oil
rosemary
sea salt
pepper

Method:
Take your meat and cut it into small cubic pieces, about 2cm.
Sprinkle them in a little oil flavoured with the rosemary you have finely chopped before. 
Now put the meat on the skewers  trying to melt the 

leanest pieces with them a bit more fat, to get the right slicing while cooking. 

Let them rest for about 1 hour in a cool place.
Drain the arrosticini and seat on a grid so that will be easy to turn them and cook on the hot barbecue on both sides. 
If you like during the cooking salt with sea salt and pepper.
I assure you one pulls the other but I think the right amount per person are 15 or 20 max! :))

Carissime amiche con questa deliziosa ricetta vi auguro un buon Ferragosto! Come sapete sono in Italia in vacanza e questi arrosticini li preparavno i pastori poveri con i piccoli pezzi di carne che avanzavano delle pecore dei loro pascoli. Gli arrosticini sono appunto arrostita sul barbecue all'esterno in modo che il grasso si scioglie per dare un sapore unico alla carne, nonché una consistenza tenera e succulenta. A me piace condirli con sale grosso e pepe durante la cottura. Vi assicuro che sono la fine del mondo!

Ingredienti:
400gr di carne di agnello
30 spiedini di legno
olio extravergine d'oliva
rosmarino
sale grosso
pepe

Preparazione:
Prendete la tua carne e dissossatela se occorre. Ora tagliatela in piccoli pezzi cubici, di circa 2cm e passateli in un po' di olio aromatizzato con il rosmarino che avrete sminuzzato finemente. Adesso infilzate la carne sugli spiedini cercando di altermare i pezzi piu' magri con queli un piu' grassi, per ottenere la giusta colatura durante la cottura. Lasciateli riposare per circa 1ora in un posto fresco, scolateli e cuoceteli sul barbecue ben caldo su entrambi i lati. Se vi piace durante la cottura salate e pepate.
Vi assicuro uno tira l'altro ma io credo che la giusta quantita' siano 15/20 a testa! Vi abbraccio tutte e vi auguro Buone Vacanze!!

Ma perche' le mie amiche italiane non mi hanno avvisato che in Italia c'era questo caldo asfissiante??? :( Persino al telegiornale hanno detto che nella bellissima Italia si raggiungono punte di 40 gradi ed oltre!! Infatti ho impiegato poco a dorarmi al sole :)) e proprio perche' ho una bella abbronzatura ho pensato di cercare su internet un sito dove poter trovare abiti e accessori a basso costo ma belli e freschi da indossare velocemente! Sandwich with chicken and azuki sprout / Panino con pollo e germogli di fagioli rossi

Finally my friends I am on vacation in my beautiful Italy!!! 

Now after a long and hard year of work I can begin to relax enjoying the good weather, the sea and the good food like these sandwiches made on the grill during a barbecue with friends! Really good I assure you :)

Ingredients

4 sunflower seeds sandwiches

2 chicken breasts

245gr of buttermilk

50ml of lemon juice

20gr of honey

20gr of soy sauce

30g of limoncello liqueur

30gr mayonnaise

1 clove of garlic

azuki sprout

4 basil leaves

salt and pepper

Method

Open the breast chicken like  a   wallet   and  season 

with salt and pepper. Now prepare the marinade by mixing the lemon juice with honey, soy sauce, minced garlic and limoncello. Mix well and add the buttermilk at a time. Put the chicken breast in the marinade and let it rest for half an hour. Then you can cook them on the grill for 6/8min. until they are golden.

Cut the sandwiches and spread on the base the mayonnaise and place some basil leaves. Now stuff with the chicken. Add the azuki sprouts to garnish and same grilled lemon slices.

Finalmente amiche mie sono in vacanza nella bellissima Italia!!! Adesso dopo un lungo anno di lavoro pesante posso cominciare a rilassarmi godendo del bel tempo, del mare e della buona cucina come questi panini fatti al volo durante una grigliata con gli amici! Veramente buoni ve lo assicuro :)

Ingredienti

4 panini ai semi di girasole

2 petti di pollo

245gr di latticello

50ml di succo di limoni

20gr di miele

20gr di salsa di soia

30gr di liquore limoncello

30gr di maionese

1 spicchio di aglio

germogli di fagioli rossi

4 foglie di basilico

sale e pepe

Preparazione

Aprite i petti di pollo a portafoglio e conditeli con sale e pepe. Ora preparate la marinata mescolando il succo di limone con il miele, la salsa di soia, l'aglio tritato e il limoncello. Mescolate bene e aggiungete poco alla volta il latticello.

Mettete i petti di pollo dentro la marinata e lasciate riposare per mezz'ora.

Adesso potete cuocerli sulla griglia per 6/8min. fino a che si dorano. Tagliate a meta' i panini e spalmate sulla base un po' di maionese e sistemate alcune foglie di basilico. Ora farcitele con il pollo. Aggiungete i germogli per guarnire e delle fettine di limone grigliate.
