today is my name-day and for this I thought to prepare this very soft and fragrant cake that I want offer you with pleasure! Grace
1kg of ricotta
200gr of sugar
100gr of raisins
80gr of butter
40gr of vanilla powder
30ml of rum
Turn the oven to 180°. Wash the lemon and dry it. Grab a bit of his skin and put it aside. Now beat the eggs with the sugar until gets a homogenous foam.
Melt the butter and mix it in a separate bowl with the sifted ricotta cheese and the grated lemon zest. Add half lemon juice too. Now put the egg yolks and sugar into ricotta cream, one tablespoon at a time and mix well. Also add vanilla powder, raisins and rum. Mix well for few minutes.
Place the mixture in a buttered mold and cook in the oven for about 25min. When the cake has taken color, take it off and cover it with a sheet of aluminum. Allow it to cool down and then serve it in slices with same icing sugar.
200gr di zucchero
100gr di uva passa
Sistemate la miscela in uno stampo imburrato e cuocete in forno per circa 25min. Quando la torta avrà preso colore, sfornatela e copritela con un foglio di alluminio. Lasciatela raffreddare e poi servitela a fette guarnite con zucchero a velo.
