parsley and mint
Sliced the onion into disks and cut the chillies. Wash the new potatoes without removing the skin and arrange all the ingredients in a wooden cutter.
Take the calamari and make the cuts across the length transversely without cutting them altogether.
Put on same salt and pepper. Now put the oil, butter and garlic in a frying pan. Grate and add the potatoes. Cook for 5min. and then take it off.
Now seat the squid in the same pan.
Cover them with the onion and parsley and bake them on each side. When they are well golden add the potatoes and the chili pepper. Sprinkle with the parsley. After a few minutes pour the lemon juice. Cook for another 2min and then serve with chopped mint leaves.
