When the sauce is ready, lower the flame further and add the slices of scamorza cheese (4) so that they sink into the sauce and that they are covered and peppered. I like to enjoy it well melted but if you prefer that the slices of scamorza do not merge, when you add them to the sauce, turn off the flame and put a lid on the frying pan. Let it rest for 1min. Instead if you like it melted, let it cook for another 2min. and serve hot with a nice fist of rocket.
