a roasted ice cream wine / un gelato al vino arrostito

450 grams of strawberries
1 teaspoon balsamic vinegar
2 tablespoons granulated sugar
250 ml of Aglianico del Vulture red wine Cantina di Venosa

Preheat the oven to 280 degrees.
In a bowl add 100 grams of strawberries cut in half with balsamic vinegar and sugar and leave them to soak.
Spread the remaining 350 grams of strawberries in a baking sheet and bake for 20 minutes until the berry juices have thickened (but are not burning). Get rid of from the oven and leave to cool.
Put the roasted strawberries and that soaks with their juices in a food processor and approach until finally smooth. Stir in the red wine and place all into ice cream forms.  Freeze popsicles for at least 45 minutes before inserting the sticks. Freeze for a remaining 4 hrs before serving.
Cantina di Venosa
450 grammi di fragole
1 cucchiaino di aceto balsamico
2 cucchiaini di zucchero granulato
250 ml di vino rosso Aglianico del Vulture Cantina di Venosa

Pre-riscaldate il forno a 280 gradi.
Mettere in una ciotola 100 grammi di fragole tagliate a metà, con aceto balsamico e zucchero e farle macerare per una mezz'ora.
Sistemare i rimanenti 350 grammi di fragole in un foglio di carta da forno all'interno di una teglia ed infornare per 20 minuti finché i succhi delle fragole si addensano. Toglierle dal forno e farle raffreddare.
Adesso mettete sia le fragole macerate nell'aceto che quelle arrostite con i loro succhi in un frullatore e frullarle.
Una volta frullate le fragole mescolatele col vino rosso e mettetelo nelle formine del gelato.
Congelare per almeno 45 minuti prima di inserire i bastoncini e rimetterle nel congelatore per altre 4 ore prima di servirle!! Cantina di Venosa
